How to make the best adobada meat you will ever have in a taco. Now for those who are not familiar with adobada, it is marinated in pork meat. With that being said, a marination sauce must be made. Which leads us to step one. This should feed up to ten people
Step 1: Creating the marination sauce

First you will need to grab a decently sized bowl preferably a 4.7 quart and above. In that bowl you will have to add: 6 dried red chilis, 3 tablespoons achiote paste,2 tablespoons guajillo chili powder, 1 tablespoon garlic powder, 1 tablespoon dried oregano, 1 tablespoon cumin, 1 tablespoon salt, 1 tablespoon pepper and finally dried pineapple. After you have added all of the dry ingredients, we will now start to put the liquid ingredient into the same bowl by first adding three quarters of a cup white vinegar, and 1 cup pineapple juice. Now it's time to add one of the defining ingredients to the adobada meat, the pineapple. The pineapple must be skinned and cut into small pieces preferably you will need to save two full round pieces for later, half an inch to an inch and a half. Now that we have created the marination sauce, next we will have to cut the meat.
Step 2: Cutting the Meat

After buying a pork shoulder, we will need to cut the pork shoulder in very thin slices preferably a quarter of an inch to half and inch, though if you like your meat to be thicker that will do as well. Once this is complete you will need to add to the bowl of marinating sauce for a minimum of two hours and no more than 5. Once this is complete we will begin to prep the marinated pork to bake, before starting the next step you will need to preheat your oven to 350 degrees.
Step 3: Prepping the Adobada

In order to complete this step you will need, yes you guessed it more pineapple, as well as a long skewer. Now this is when the two round pieces come to play as they will serve as base and top to keep the meat together. You will start by putting the pineapple base through the skewer then continue by adding all the pork, once you have added all the pork then add the second pineapple on top please note that this should be done on a baking sheet. Now to the last step.
Step 4: Baking the Adobada

Now that you have completed every step, you will now need to put into your preheated oven for 1 hour and 15 minutes to an hour and a half depending on how you like your meat. Once you have taken it out of the oven you will cut the meat in half to half an inch going, you can do this as it's on the skewer or taken off the skewer.
